These oatmeal cookies are a delicious combination of oats, cinnamon, and brown sugar, with optional add-ins like raisins or chocolate chips. They’re soft in the center with golden edges, perfect for a treat!

Ingredients

Scale
  • 1 cup softened butter
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 3 cups Quaker oats (old-fashioned or quick oats)
  • 1 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Cream butter and sugars together in a large bowl until light and fluffy.

  3. Add eggs and vanilla, mixing until well combined.

  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.

  5. Gradually mix dry ingredients into wet ingredients until just combined.

  6. Stir in oats and any mix-ins like raisins or chocolate chips. Be careful not to overmix.

  7. Scoop dough onto the baking sheet using a tablespoon or cookie scoop, leaving space between each cookie.

  8. Bake for 10–12 minutes or until edges are golden brown, but the centers remain soft.
